How to Make Garlic Rosemary Potatoes

One of our family favorites is garlic rosemary potatoes. So good, so easy, and such a wonderful side for so many dishes.

Does the Type of Potato Matter?

Oh yes, I do believe it does. Or at the very least, I would love for you to try my recommended potato for this recipe because they are so delicious.

Red Potatoes, or as my family always called them, New potatoes. I don’t know if all red potatoes are actually New potatoes, but that’s how my family has always considered them so we continue to do so.

How to Make Garlic Rosemary Potatoes

With six ingredients that many already have in their kitchen, we will turn plain ole potatoes into something your family is going to love! So let’s get started.

Ingredients:

  • 2 lbs. red potatoes
  • 3 cloves fresh garlic (chopped)
  • 2 T. fresh rosemary (chopped)
  • 3 T. good olive oil
  • 1 t. salt
  • 1/2 t. pepper

How to Make Garlic Rosemary Potatoes

Preheat oven to 400 degrees.

Rinse the red potatoes well. If you have a small brush, it works great in getting into those little divots. Blot dry with a paper towel and cut into 1″ pieces. Add to a 13″ x 9″ casserole dish.

Add the remaining ingredients (garlic, rosemary, olive oil, salt, and pepper) and toss well. Ensure that all ingredients are tossed well and the potatoes are well coated.

Cover dish with aluminum foil and place in the 400 degree preheated oven for 40 minutes. After the 40 minutes is up, remove the aluminum foil and stir the potatoes around. Continue to bake for an additional 10 minutes in order to brown the edges of the potatoes.

NOTE: If the potatoes are not brown enough at the end the baking time, place them under the broiler for a couple of minutes until they have the brownness that you prefer. Don’t take your eyes off of them because they will burn quickly if not careful.

Garlic Rosemary Potatoes

One of our family's favorites, Garlic Rosemary Potatoes. So good, so easy, and such a wonderful side for so many dishes.

Prep Time 15 minutes
Cook Time 55 minutes

Ingredients

  • 2 lbs red potatoes
  • 3 cloves fresh garlic chopped
  • 2 tbsp fresh rosemary chopped
  • 3 tbsp good olive oil extra virgin
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper

Instructions

  • Preheat oven to 400 degrees.
  • Rinse the red potatoes well. If you have a small brush, it works great in getting into the little divots. Blot dry with a paper towel and cut into 1" pieces. Add to a 9" x 13" casserole dish.
  • Add the remaining ingredients (garlic, rosemary, olive oil, salt, and pepper) and toss well. Ensure that all ingredients are tossed well and the potatoes are well coated.
  • Cover the casserole dish with aluminum foil and place in the preheated oven for 40 minutes. After the 40 minutes is up, remove the aluminum foil and stir the potatoes around. Continue to bake for an additional 10 minutes in order to brown the edges of the potatoes.

Notes

If you do not have fresh garlic or fresh rosemary, you can substitute with garlic powder and dried rosemary. It won’t be as good as it is with fresh but the potatoes will still be very tasty.
Another option:  replace the rosemary with your herb of choice. Potatoes are so versatile.
