- Preheat oven to 400 degrees.Rinse the red potatoes well. If you have a small brush, it works great in getting into those little divots. Blot dry with a paper towel and cut into 1″ pieces. Add to a 13″ x 9″ casserole dish.Add the remaining ingredients (garlic, rosemary, olive oil, salt, and pepper) and toss well. Ensure that all ingredients are tossed well and the potatoes are well coated.Cover dish with aluminum foil and place in the 400 degree preheated oven for 40 minutes. After the 40 minutes is up, remove the aluminum foil and stir the potatoes around. Continue to bake for an additional 10 minutes in order to brown the edges of the potatoes.

Notes
If the potatoes are not brown enough at the end the baking time, place them under the broiler for a couple of minutes until they have the brownness that you prefer. Don’t take your eyes off of them because they will burn quickly if not careful.
