Garlic Rosemary Potatoes

One of our family's favorites, Garlic Rosemary Potatoes. So good, so easy, and such a wonderful side for so many dishes.

Ingredients

  • 2 lbs red potatoes
  • 3 cloves fresh garlic chopped
  • 2 tbsp fresh rosemary chopped
  • 3 tbsp good olive oil extra virgin
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper

Instructions

  • Preheat oven to 400 degrees.
  • Rinse the red potatoes well. If you have a small brush, it works great in getting into the little divots. Blot dry with a paper towel and cut into 1" pieces. Add to a 9" x 13" casserole dish.
  • Add the remaining ingredients (garlic, rosemary, olive oil, salt, and pepper) and toss well. Ensure that all ingredients are tossed well and the potatoes are well coated.
  • Cover the casserole dish with aluminum foil and place in the preheated oven for 40 minutes. After the 40 minutes is up, remove the aluminum foil and stir the potatoes around. Continue to bake for an additional 10 minutes in order to brown the edges of the potatoes.

Notes

If you do not have fresh garlic or fresh rosemary, you can substitute with garlic powder and dried rosemary. It won't be as good as it is with fresh but the potatoes will still be very tasty.
Another option:  replace the rosemary with your herb of choice. Potatoes are so versatile.
